That Scrumdiddlyumptious Mud Pie Cake recipe, and more party pics



The Op Shops did a good trade with everyone looking for gear to wear to our granddaughter C's 80's theme birthday party. The smell of hairspray heavy in the air and the compilation music tapes ... er, disks or whatever they use nowadays, playing,  we oldies retired to the front room and left the youngies to it.  Of course, when Dad brought the pizzas and fried chicken home, it was on for young and old!  
Time for the cake, a Pac-Man cake no less!  Our clever daughter, G, had put it all together with a minimum of fuss. Oh, it tasted so good too.   



C was thrilled with her Pac-Man cake
 Here's the recipe:

G's Scrumdiddlyumptious Mud Pie Cake  
Ingredients:
250g butter
200g dark chocolate
2 cups caster sugar
11/3  cups water
1 teaspoon instant coffee
¾ cup Plain Flour
¾ cup S.R. Flour
¼ cup cocoa powder
3 eggs, lightly beaten

Icing:
125g butter
¾ cup icing sugar
125g white chocolate

Method
1. In large saucepan, add the first 5 ingredients.
2. Melt together over a low heat until sugar is dissolved and butter and chocolate are melted. Allow to cool for 10 minutes.
3. Sift Plain Flour, S.R. Flour and cocoa powder into the saucepan with the cooled liquid:

4. Stir it all together: 
..... then blend with a handmixer in the saucepan.

5. Add the eggs and mix gently:


6. Pour mixture into greased 20cm cake tin and bake at 150 degr celsius (302 deg fahrenheit) for 1¾ hours. 
Check the cake, it may not need this much time (depends on the oven).
 Icing:
  1. Cream butter and icing sugar then add melted white chocolate.
  2. Spread over the cooled cake.
This makes enough icing to cover the sides and top of one big cake. 
Well on its way to becoming a Pac-Man
G says that this cake is best made at least one day before eating… preferably two! 
I say that, as well as it being a thoroughly delicious rich and dense mud cake, the icing is nice and smooth and not sickly sweet tasting.

I just have to add this final bit. The morning after her party, C, and two of her friends who slept over, got themselves up early and reported to the Salvation Army Red Shield Appeal headquarters as doorknock volunteers.  
They raised several hundred dollars.

    I love the cake it looks like fun. I am going to copy the recipe and make it and eat the whole thing. Darn no willpower.

  4. What a cool cake!!! Great theme the 80's! That cake really looks delicious...and the adorable pets being shy, but getting into the act! It looks like a great party Susan. And kudos to the girls for getting up and volunteering!!! EVERYTHING makes a difference.

  7. I love the animal photos! And it gladdens my heart to hear of young folks volunteering!

    I had a similiar cake once that was delicious and sounds alot like that one. I haven't made it but it is populare in the south and called a Mississippi Mud Cake. Has nuts in it I think. It is dense, moist, and rich and awesome!

    BTW, this guy in the store asked me what caster sugar was the other day. He had a recipe to follow and I had no clue.

  9. > Susan, hi ... scrummyyummy it was! Oh, and I should mention that C's Dad (D) came home with a caramel cheesecake for her family birthday dinner - wow and wow, we all just cooed and melted over that one too - *bliss*... he did good ;-)
    Yes, as well as being proud of the volunteering, you know, we were impressed at the manners and respect all the teens displayed. The world's in a good place when you know such fine young people will be in its future :D)

    It just knocked us out, Mary, knowing that C and her friends had set their alarm to get up the next morning to volunteer. Oh boy, I must be honest... I don't think I would've way back in the mists of time when I was a young teen !!
    Guess you've found out by now about caster sugar, that it's just a finer version of white sugar :D)

  15. A bit late with my visit, Susan. This has been another busy week and I'm so behind with so many things.

    I loved hearing all about C's birthday, sharing in all the eats and getting to read the cake recipe. Sadly, I'm so lazy about baking, I know I probably won't try it :(

    Super pics of all the furbabies enjoying the party/not enjoying the party and so glad the little patient and her bear were up to enjoying some of the eats, too :)

    Sounds as though Granny had the BEST time :) and so proud of C and her friends for collecting so much donation money...well done, young ladies!

  19. well....this cake is def in my future....i like that it gets better with time, most cakes don't. there is always so much last minute stuff to do for a party, i like that the cake can be made 2 days before.

    you tell wonderful stories....

    sounds super delish....i wonder if buttons ate the whole thing?!?
